The 25th April is Anzac day.
As stated in Wikipedia, Anzac day is a national day of remembrance in Australia and New Zealand “that broadly commemorates all Australians and New Zealanders “who served and died in all wars, conflicts, and peacekeeping operations” and “the contribution and suffering of all those who have served” “.

As a child growing up in Zimbabwe we were actually brought up with Anzac Biscuits as we had an aunty who lived in Australia and she sent the recipe to my mother. If was from these biscuits that we learnt about Anzac day and the Australian and New Zealand Army Corps (ANZAC) who fought at Gallipoli and the Ottoman Empire during World War I.
Anzac biscuits were sent by wives to soldiers abroad because the ingredients did not spoil easily during naval transport.
The soldiers must have been happy to receive these biscuits because they are a very delicious sweet biscuit made with rolled oats, coconut, golden syrup, sugar, butter and flour. Notice no eggs because of the scarcity of eggs during the war and so that the biscuits would not spoil during the long journey to the soldiers.
I don’t eat much biscuits but this would have to be one of my favourite biscuits of all time.
Anzac biscuits are manufactured commercially nowadays but living in Austria they are not so easily available so we bake our own. It’s not difficult to bake at all, quite quick and easy actually.
These delicious melt in your mouth Anzac biscuits were baked my dear friend Ingrid. We haven’t seen each other in quite a long time even through we only live about 30 mins drive away and we just happen to catch up close to Anzac day so she baked these delicious gems so that we could remember the ANZACs.
I am sharing with you now the Anzac biscuit recipe that I grew up with.
Recipe from CSR
125g (4oz) flour
150g (6oz) sugar
1 cup coconut
1 cup rolled oats
100g (3 1/2oz) butter or margarine
1 teaspoon golden syrup
1/2 teaspoon bicarbonate of soda
2 tablespoons boiling water
- Mix together flour, sugar, coconut and roll oats.
- Melt butter and golden syrup.
- Dissolve bicarbonate of soda in the boiling water and add to butter and golden syrup.
- Make a well in the centre of flour, stir in liquid.
- Place spoonfuls on greased trays.
- Bake 15-20 minutes at 180 degrees C (350 degrees F).
Enjoy with a lovely cuppa tea or coffee or a glass of ice-cold milk.
